Bread and butter pudding

Ingredients

  • 1.25 Pints of full Milk

  • 1 Lemon

  • 4 oz unsalted Butter

  • 6 Slices thick white bread

  • 3 oz no soak dried Apricots

  • 3 oz sultanas

  • 3 oz Currants

  • 6 large Eggs

  • 3 oz caster sugar

  • 2 tablespoons Brandy

  • 0.5 tablespoon rose-water

  • 2 tablespoons Demerara sugar

  • 1 tablespoon ground Cinnamon

Method

  • 1.

    Prepare custard & place on heat.

  • 2.

    Chop apricots, cut bread & butter it.

  • 3.

    Prepare bain-marie.

  • 4.

    Place pudding ingredients in dish.

  • 5.

    Bring custard to boil, pour over pudding, sprinkle with Demerara sugar, place in oven.

  • 6.

    Serve.
