Smoked Haddock

Smoked Haddock with baby leeks, gruyere and cheddar cheese, served with baby asparagus and garnished with grated parmesan.

Ingredients

  • 1 large fillet of hot smoked haddock or 1 large 'Arbroath Smokey' boned and flaked

  • 500 g baby Leeks

  • 200 g gruyere cheese

  • 50 g mature cheddar cheese grated

  • 25 g Parmesan fresh and finely grated

  • 1 Pint whole fat Milk

  • 40 g Plain Flour

  • 1 Pinch of Cayenne pepper

  • 1 Pinch of freshly grated Nutmeg

  • 1 Pinch of salt and freshly milled Black pepper

  • 400 g baby asparagus

  • 1 Lemon

  • 50 g salted Butter

Method

  • 1.

    Add butter to pan and thinly chop baby leeks

  • 2.

    Sweat in pan stirring for 10 minutes

  • 3.

    Place milk, flour, butter and cayenne pepper in a medium saucepan and place on medium heat 4. Whisk until simmering

  • 4.

    Continue to whisk until sauce is smooth and glossy

  • 5.

    Flake fish

  • 6.

    Add Cheddar and Parmesan cheeses and allow to melt

  • 7.

    Grate Gruyere cheese

  • 8.

    Place asparagus in saucepan

  • 9.

    Place 3 rings onto baking parchment, fill with leeks, cheese sauce, flaked fish topped with Gruyere and place under grill

  • 10.

    Remove asparagus from heat

  • 11.

    Watch grill
