Italians love making use of seasonal produce and this dish is no exception.


  • Pasta (enough for 4 people)

  • Sea salt and freshly ground pepper

  • Extra virgin olive oil

  • 4 fresh small red chillies, finely chopped

  • 2 cups sweet cherry tomatoes, in half

  • Splash red wine vinegar

  • 2 Tablespoons basil leaves, roughly chopped

  • 2 tablespoons Italian parsley leaves, roughly chopped

  • Parmesan, to serve


  • 1.

    Bring a large pot of salted water to the boil and cook the pasta for 6 minutes.

    Heat a little extra virgin olive oil in a pan.

  • 4.

    Add the chillies and saute ½ minute.

  • 5.

    Add the tomatoes, a splash of red wine vinegar and freshly ground pepper.

  • 6.

    Mix through.

  • 7.

    Add the basil and parsley and finally the pasta.

  • 8.

    To serve, transfer the pasta to a service bowl and finish with parmesan and more fresh herbs.

This is such a simple but delicious dish. One of my favourite pasta recipes.
