A simple, lovely cake perfect for afternoon tea.
Preheat oven to 180C. Butter and flour a spring-form cake tin and line the bottom with parchment paper.
Add butter, eggs, sugar, almond meal, flour and baking powder into a food processor. Pulse until well combined and the mixture is smooth. Add in chopped almonds and SodaStream sparkling water. Pulse until just combined. The batter should come out very thick.
Transfer half of the batter into the prepared baking form and scatter over with raspberries. Top with the remaining batter and sprinkle with almond flakes. Bake for 50-55 minutes or until golden brown and until a skewer comes out clean.
Leave in the spring-form cake tin to cool for 15 minutes before removing. Dust with icing sugar. Serve warm or at room temperature and enjoy!
