A delicious, simple dish that's perfect for beginners and experienced cooks.
Combine all pasta ingredients Smeg Stand Mixer and mix with the rough hook attached for 2 minutes, or until smooth
Continue to knead dough to activate the gluten until silk smooth
Wrap dough in a tea towel and refrigerate for 40 min to an hour
Remove from fridge and put dough through pasta sheet rollers from setting 0, working down to 6
Fold over repeats until dough is smooth
Cut rolled sheets to length and then put through tagliatelle roller on mixer
Cook for 1 min in boiling salted water
Drain, add salad ingredients, add extra virgin olive oil and season to taste
