These crepes are the perfect addition to any salad, curry or stew.
Soak lentils in 3 cups of water for at least 2 hours until they are soft
Add lentils, 1/2 cup of water and remaining ingredients to a high powered blender and blend until it’s a smooth liquid, it should be quite running so add more water if needed
Heat a small amount of oil in pan and pour a small amount of the liquid and move around the pan to form a large circle
Fry on each side until brown and slightly crispy
Serve with fresh salad, curry or your favourite stew
