A simple and tasty mid-week meal. 


  • 1 tsp Macro Organic Extra Virgin Spanish Olive Oil

  • 1 cup Macro Certified Organic Frozen Mango, defrosted

  • 1 medium Macro Certified Organic Chicken Breast Fillet

  • 1/2 cup snow peas, sliced in half

  • 1 capsicum, diced

  • 1/2 Macro Organic brown onion, sliced

  • 1/4 cup Macro Dry Roasted Cashews

  • 1 small handful of coriander, roughly chopped

  • Rice, to serve

  • Dressing

  • 1 tbsp soy sauce

  • 1 garlic clove, crushed

  • 1/2 tsp fresh ginger, grated

  • 1 tsp Macro Organic Honey

  • Water, to thin

  • Lime juice, to taste


  • 1.

    In a non-stick pan, add the garlic, onion and chicken, and cook for 5-6 minutes until the chicken is cooked through.

  • 2.

    Remove chicken from pan and add snow peas, capsicum and cashews. Cook for 3-4 minutes or until they begin to soften.

  • 3.

    Return the chicken to the onion mixture and add in the defrosted mango.

  • 4.

    Combine all dressing ingredients and stir through mixture.

  • 5.

    Serve with rice and top with fresh coriander and a squeeze of lime.
