A delicious vegetarian snack bursting with flavour.
Roughly mash up cooked red kidney beans with a potato masher.
Steam the potato, carrot and sweet potato until tender and leave to cool.
Add the steamed vegetables to the mashed up beans and mix together.
Add chopped up chives, coriander, tomato paste and Cajun spice and mix thoroughly.
Roll into balls and place them onto a grease lined tray and flatten the balls into patties.
Bake in oven on 180 for 15 minutes. Serve with salsa on top of each pattie.
Dice the above ingredients very fine and mix together. Place a tbsp of the salsa on top of each Cajun Pattie before serving.
