A delicious and healthy way to start the day. 

Ingredients

  • 15 Medjool dates, pitted

  • 1 tbsp almond butter

  • 2 tsp coconut oil

  • 150g buckwheat grouts

  • 30g cacao powder

  • 65g shredded coconut

  • 30g cacao nibs

  • 2 tsp ground cinnamon

  • 1 tbsp flax seeds

  • Baked nectarines

  • 6-8 nectarines

  • 1/4 cup coconut sugar

  • 1 vanilla pod

Method

  • 1.

    Add the Medjool dates, almond butter and coconut oil to a high-speed food processor and blitz into a paste. Set aside.

  • 2.

    Combine remaining ingredients in a large bowl. Add date paste and mix well. Turn onto a large, lined baking tray and spread the mix evenly. Set in freezer until hard.

  • 3.

    Remove from freezer. Break into chunks and store in a container in the fridge until you’re ready to assemble your jars.

  • 4.

    To make the baked nectarines, scrape the vanilla beans into the coconut sugar, and mix together.

  • 5.

    Rub on the cut side of a nectarine, and place in a baking tray.

  • 6.

    Place under a hot grill for 4-6 mins, or until looking golden and delicious.

  • 7.

    Now it’s time to assemble the trifles. Layer up each jar with coconut yoghurt, a drizzle of pure maple syrup, the "rawnola" and the delicious, freshly baked nectarines.
