A light and fresh lunch that's easy to whip up. 

Ingredients

  • 750g barramundi fillets

  • 3 tbsp white wine

  • 2 tbsp butter

  • 6 flour tortillas

  • Sweet chilli sauce

  • Mayonnaise

  • Marinade

  • 4 cloves of diced garlic

  • 1 tbsp fresh diced ginger

  • 1 tbsp green pepper corns

  • 2 tbsp rice bran oil

  • Season with salt and white pepper

  • Salad

  • 1 lettuce of your choice

  • 2 spring onions

  • 4 roma tomatoes

  • 3 limes

Method

  • 1.

    Marinate barramundi fillets in marinade mixture for 20 minutes.

  • 2.

    Heat up your BBQ plate and add barramundi fillets, white wine and butter. 

  • 3.

    Cook on medium heat for 8-10 minutes or until fish flakes when prodded with a fork. 

  • 4.

    Chop salad ingredients and serve in bowls so people can add to their wraps. 

  • 5.

    Toast your flour tortillas and serve with some sweet chilli sauce and mayonnaise.
