A super simple sweet treat.


  • 2 cups walnuts

  • 100g medjool dates, pips removed 

  • 1 cup grated carrot

  • 1/2 cup desiccated coconut

  • 2 tbsp CSR coconut sugar

  • 1/4 tsp mixed spice

  • Extra coconut, for coating


  • 1.

    Place walnuts, dates, carrot, coconut, sugar and spice in a food processor. Pulse until mixture is smooth.

  • 2.

    Roll teaspoonfuls into balls and coat in the additional coconut. Refrigerate and eat as required.
