  • 1 boneless skinless chicken breast chopped finely

  • 0.5 cup Chicken Broth

  • 2 Cloves Garlic minced

  • 1 red Thai Chilli minced

  • 1 knob (small) Ginger grated

  • 1 Pinch of Salt

  • 1 tablespoon Sugar

  • 2 carrots peeled into strips

  • 1 Red Onion peeled and thinly sliced

  • 2 tablespoons Fish sauce

  • 1 cup Peanut or almond slivers

  • Zest and juice of 1 Lime

  • coriander leaf chopped


  • 1.

    Toss the chicken and the broth into a sauté pan set over a medium heat. Add the garlic, chili, ginger, salt and sugar. Stir and continue cooking until the chicken is cooked through.

    Toss the cooked chicken with the remaining ingredients.
