Put rice in a sieve and rinse it well under cold water until the water runs clear. Place the rice in a small pot and add water until it is level with the top of the rice. Then, place the tip of your index finger on top of the rice and add more water until the level reaches the first joint on the index finger. Bring to a boil and then reduce heat, cover tightly and simmer for 15 minutes. Turn off the heat and without opening the lid let the rice rest for 15 more minutes.
