A sweeter way to enjoy breakfast.
Heat the oil in a medium frying pan over medium heat.
In a small bowl, beat the eggs, then add the cinnamon, nutmeg, chia seeds, vanilla and salt. Stir in the mashed banana.
Pour the mixture into the frying pan and leave until cooked on the bottom. Scatter the berries and nuts on top, and continue cooking until firm.
Carefully remove from the pan, drizzle over the honey, top with shredded coconut and serve immediately.
