• 3 lb fresh Mussels well rinsed

  • 3 cups Water

  • 1 tablespoon Sriracha Hot sauce

  • 1 Pinch of (large) Salt

  • A heaping spoonful of Sugar

  • The juice of 1 Lime

  • 1 bunch (small) Coriander stems removed


  • 1.

    Place mussels into a large pot with a tight fitting lid and add the water, Sriracha, salt and sugar. Cover with the lid and steam the mussels until they have all opened. Discard any unopened mussels. Squeeze in the limejuice and coriander leaves just prior to serving.
