A delicious alternative to classic burgers. 

Ingredients

  • 300g firm silken tofu

  • 1 tbsp olive oil

  • 1 medium brown onion, chopped finely

  • 2 cloves garlic, crushed

  • 1/4 tsp sweet paprika

  • 1 tsp ground turmeric

  • 2 tsp ground coriander

  • 1 small zucchini, grated coarsely

  • 2 cups fresh breadcrumbs

  • 3/4 cup hummus

  • 1/4 cup greek-style yoghurt

  • 1 loaf turkish bread 

  • 1/3 cup coarsely chopped fresh mint

  • 1/2 cup coarsely chopped fresh flat-leaf parsley

  • 1 green onion, sliced thinly

  • 30g snow pea sprouts, trimmed

Method

  • 1.

    Pat tofu dry with absorbent paper. Spread tofu, in single layer, on absorbent-paper-lined tray; cover tofu with more paper, stand 20 minutes.

  • 2.

    Meanwhile, heat oil in medium frying pan; cook brown onion and garlic, stirring, until onion softens. Add spices; cook, stirring, until fragrant.

  • 3.

    Combine onion mixture in large bowl with tofu, zucchini and breadcrumbs; shape into four patties. Cover; refrigerate 30 minutes.

  • 4.

    Meanwhile, combine hummus and yogurt in small bowl.

  • 5.

    Close the hood and preheat your BBQ, (for best results use one of Ziegler and Brown’s range) with the burners set to HIGH and the hood down until the hood thermometer reads around 200C.

  • 6.

    Set burner to MED. Cut bread into four pieces. Split each piece in half horizontally; toast cut sides on heated grill.

  • 7.

    Cook patties on barbeque until browned both sides and hot.

  • 8.

    Spread bread with hummus mixture; place combined mint, parsley and green onion, patties and sprouts between bread pieces.
