Smashed Potatoes with Olive Oil and Chicken Broth


  • 6 Yukon Gold Potatoes quartered

  • 1 L Chicken Broth

  • 0.5 cup Olive Oil

  • Salt & Pepper


  • 1.

    Put potatoes into a large saucepan and add enough stock to just cover them. Add olive oil and salt and pepper and simmer until the potatoes are soft. Smash with a potato masher and add more stock or olive oil if they seem dry.

I though you would roast or fry after they are boiled,they look to messy
