• 6 Yukon Gold Potatoes washed and cut into quarters

  • 1 cup grated Grana Padano cheese

  • 0.5 cup Extra Virgin Olive Oil

  • Salt & Pepper to taste

  • 1 bunch chopped Flat-leaf parsley

    Steam potatoes in a stovetop steamer until tender, about 15-20 minutes. Alternatively place them in a pot with a lid and add 2 or 3 inches of water to the bottom. Steaming cooks faster and leaves more nutrients and flavour in the potato than boiling.

  • 2.

    Place potatoes into a large bowl and add cheese, olive oil and salt and pepper. Mash away, adding more oil if you prefer a thinner consistency. Stir in the parsley just before serving.
