A refreshing beverage for warm summer nights.
Place the washed and chopped rhubarb pieces into a large pot with the sugar, water and zest.
Bring to the boil and simmer for 15 minutes or until soft, allow to cool.
Push the juice and pulp through a fine sieve, discard remaining pulp.
You will be left with a vibrant pink syrup with some viscosity from the rhubarb that goes through the sieve, chill until ready to use.
Mix together the syrup, grapefruit juice, soda and lime just prior to serving.
Place 2 ice cubes and 3 rose petals into each glass, top with 150ml drink, serve immediately.
