This is my healthy version of a Sunday fry up. A healthy hash brown, one fried egg, and plenty of fresh herbs. Delicious!

Ingredients

  • Hash

  • 1/4 head cauliflower, grated

  • 1 large free range egg

  • 1 garlic clove, crushed

  • 1/4 tsp turmeric

  • 1/4 tsp cumin

  • Sea salt and black pepper, to taste

  • 2 tsp extra virgin oliTo serve

  • To serve

  • 1 large free range egg

  • 1/4 cup plain Greek yoghurt

  • 1 tbsp each mint, chives, parsley, and dill, finely chopped

  • 1 tsp extra virgin olive oil

  • Sea salt and black pepper, to tasteve oil

Method

  • 1.

    Squeeze excess water out of the cauliflower through cheesecloth.

  • 2.

    Combine cauliflower in a bowl with the egg, garlic, turmeric, and cumin. Season to taste.

  • 3.

    Heat two teaspoons of olive oil in a frypan over a medium heat.

  • 4.

    Pour in the cauliflower mix, shape into two ‘hashbrowns’ and flatten with a spatula. Cook for 4-5 minutes, or until the edges are brown. Flip and repeat on the other side, until cooked through. Transfer to a plate.

  • 5.

    Add another teaspoon of olive oil and carefully crack the egg. Leave to cook until the white is cooked through and the edges crispy.

  • 6.

    Finely chop your dill, and mix it through the Greek yoghurt.

  • 7.

    Place your egg on top of the hash, with a big dollop of dill yoghurt and plenty of fresh herbs
