A tasty addition to the weeknight meal rotation. 


  • 2 tbsp brown rice

  • 1 tsp olive oil extra virgin

  • 2 mushrooms (button or cup), sliced

  • 1 cup broccoli cut into florets

  • 1/2  red capsicum, cut into 2cm pieces

  • 1/4 red onion sliced

  • 1 cup snowpeas, trimmed

  • 1/2 tbsp lemongrass

  • 1/2 tbsp ginger grated

  • 1/2 tsp red chilli, finely chopped

  • 1/2 tbsp tamari (or soy sauce)

  • 1 1/2 tbsp natural cashews


  • 1.

    To begin, cook rice according to packet instructions.

  • 2.

    Meanwhile, heat the oil in a wok over high heat. Add the mushrooms, broccoli, capsicum, onion

  • 3.

    And snowpeas for 3-4 minutes, or until just tender.

  • 4.

    Add the lemongrass, ginger, chilli, tamari and cashews and cook for a further minute.

  • 5.

    Serve stir-fry in a bowl with the brown rice.
