Serve up these delicious starters to get appetites going.
Heat the pan, add ghee/oil.
Add mustard seeds, dal, chilies and cook for 2 minutes.
Then add garlic, ginger, curry leaves and onions until onions are soft and all the ingredients bind together nicely.
Add the crushed potatoes, mix well and season with salt.
Heat a flat pan (nonstick) and put a tea spoon of oil. Put dosa batter on the pan and spread it out to make a 10 inch circle that is about 1mm thick.
Once the batter is cooked and crispy, put masala potatoes on top and roll the dosa.
Garnish with coconut chutney and edible flowers (optional).
