If Tim Tams mixed with cookies weren't mouthwatering enough, squish some ice cream in the middle to create this delicious cookie sandwich.


  • 200g unsalted butter, chopped

  • 1 cup brown sugar

  • 1 1/2 tsp vanilla bean paste

  • 1/2 cup caster sugar

  • 2 tbsp milk

  • 1 egg

  • 2 cups plain flour

  • 1/4 tsp baking powder

  • 1/4 tsp bicarb soda

  • 1/2 tsp sea salt flakes

  • 200g packet original tim tams, roughly chopped

  • 1L tub vanilla ice-cream

  • Optional 100g extra tim tams to sprinkle around the edges of the sandwiches

    To make the Tim Tam cookies; Using an electric mixer or beaters, cream together the butter and both sugars until the mix becomes pale and creamy.

    In a small jug, whisk together the egg, vanilla and milk. Add to the butter mix and beat again

  • 3.

    Fluffy and fully combined.

  • 4.

    Sift in the flour, baking powder and bicarb. Add salt and mix using a wooden spoon.

  • 5.

    Fold through the chopped Tim Tams. Place the bowl into the refrigerator for 20 minutes to chill the mix. Preheat your oven to 180C.

  • 6.

    Roll tablespoons into balls and place on a baking paper lined tray with 5cm spaces in between each cookie. Bake for 10 minutes and repeat with remaining cookies. Allow to cool on the trays.

  • 7.

    Take two cookies and sandwich together with a scoop of ice-cream. Place ice-cream sandwiches in the freezer until ready to serve.
