A quick and easy vegetarian meal perfect for busy weeknights. 


  • 1 SunRice SuperGrains Super-Duo microwave cup

  • Handful of snow peas

  • 1-2 heads of bok choy, quartered

  • 1/3 cup hand broken firm or silken tofu

  • 1 tbsp fried shallots

  • Sliced long red chilli to garnish (optional)

  • Dressing

  • 1 tbsp caramelised garlic oil 

  • 1 tbsp mushroom oyster sauce

  • 1 tbsp malt vinegar


  • 1.

    To make the dressing, shake all the dressing ingredients in a clean glass jar until well mixed.

  • 2.

    Prepare the SuperGrains using packet instructions.

  • 3.

    Place the snow peas and bok choy in a bowl, then cover with boiled water to blanch for 5 seconds. Drain well then toss with tofu and as much dressing as you wish.

  • 4.

    Serve on top of rice and garnish with fried shallots and chilli.
