This vegan crumble will make you feel warm and fuzzy on the inside. It's also a great breakfast dish! Recipe from Happy Food by Bettina Campolucci.


  • 600 g (1 lb 5 oz) mixed frozen berries

  • 1 red or green apple, chopped into cubes

  • 125 ml (4 fl oz / 1/2 cup) orange juice or juice from 2 fresh oranges

  • 2 tablespoons coconut sugar

  • 1 vanilla pod (bean), seeds scraped

  • For the crumble

  • 35 g (11/2 oz / 1/4 cup) pistachios

  • 35 g (11/2 oz / 1/4 cup) raw hazelnuts

  • 90 g (31/2 oz / 1 cup) oat bran

  • 2 medjool dates, stoned (pitted)

  • 35 ml (11/2 fl oz / 1/8 cup) coconut oil

  • 1 tablespoon maple syrup

  • pinch of salt

  • To serve

  • Vanilla Custard * (see footnote for recipe below)

  • Dollop of Coconut Yoghurt, shop-bought or home-made


  • 1.

    Preheat the oven to 170ºC (340ºF/Gas 3).

  • 2.

    In a bowl combine the berries, apple, orange juice, coconut sugar and vanilla seeds and ladle into a large baking tray or 6 small ramekins.

  • 3.

    In a blender, blitz the crumble ingredients and pulse a few times until you have a chunky consistency – not too fine and not too chunky.

  • 4.

    Spread the crumble over the berry mixture and cook in the oven for 45 minutes, possibly a bit longer if you like your topping crispy. Serve with custard or coconut yoghurt.
