This vegan crumble will make you feel warm and fuzzy on the inside. It's also a great breakfast dish! Recipe from Happy Food by Bettina Campolucci.
Preheat the oven to 170ºC (340ºF/Gas 3).
In a bowl combine the berries, apple, orange juice, coconut sugar and vanilla seeds and ladle into a large baking tray or 6 small ramekins.
In a blender, blitz the crumble ingredients and pulse a few times until you have a chunky consistency – not too fine and not too chunky.
Spread the crumble over the berry mixture and cook in the oven for 45 minutes, possibly a bit longer if you like your topping crispy. Serve with custard or coconut yoghurt.
