The healthiest way to cook fish is by steaming it. Try out this delicious, easy and healthy recipe. 


  • 2 x 180g snapper fillets (Barramundi or other firm white fish like Blue Eye Travella, also steams well)

  • 2 tsp sesame oil

  • 3cm piece fresh ginger, peeled, cut into thin matchsticks

  • 1 garlic clove, thinly sliced

  • 1 lime, sliced

  • 1 cup coriander leaves

  • 2 spring onions, thinly sliced

  • 1 long red chilli, deseeded, thinly sliced

  • 1 tbs rice wine vinegar

  • 1 tbs soy sauce

  • Steamed Asian greens (bok choy), to serve


  • 1.

    Bring 2 cups cold water to a simmer in a large wok over medium heat. Place bamboo steamer over water.

  • 2.

    Place each fillet on a  piece of baking paper slightly larger than the fillet. Drizzle with a little sesame oil, ginger, garlic and top with slices of lime.

  • 3.

    Place fish in steamer. Cover. Steam for 5 to 10 minutes or until just cooked through .

  • 4.

    Carefully transfer to a plate and keep warm.

  • 5.

    Top with coriander, spring onion, soy sauce and chilli.

  • 6.

    Serve with steamed greens.

Note: If you don’t have a bamboo steamer, place a colander in a saucepan (ensuring it doesn’t touch the water), and cover with a lid. This will achieve the same result.
