Bring all the delicious elements together with a science-inspired jigsaw biscuit, flavoured with banana, kumquat, lemon, chocolate and orange.

Ingredients

  • Basic biscuit mixture

  • 300g unsalted butter

  • 300g caster sugar

  • 825g soft flour

  • 3 eggs

  • Banana biscuits with marshmallow icing

  • 150g biscuit mixture

  • 2tbs soft flour

  • 1 tbs vanilla extract

  • 70g mashed ripened banana

  • Kumquat vanilla biscuit

  • 300g biscuit mixture

  • 50g kumquat krumble

  • 1 tbs vanilla extract

  • Lemon biscuit

  • 1tbs lemon zest

  • ½ tbs vanilla

  • Chocolate and orange biscuit

  • 1 tbs cocoa (mixed with 1tbs boiling water to form paste)

  • 2tbs orange zest

  • 1 tbs orange juice

  • Royal icing

  • 6 eggs

  • 12 cups icing sugar

  • 4tbs vanilla

  • 2tsp lemon juice

  • Lemon icing

  • 100g royal Icing mixture

  • 1tbs Lemon juice

  • A few drops lemon food colouring to make a pale yellow

  • Lemon zest

  • Orange icing

  • 50g royal icing mixture

  • 1 tbs orange juice

  • Orange zest

  • Orange food colouring

  • For decorations

  • Black writing gel

  • Silver pearl dust

  • Lemon food flavour (to mix with the silver pear dust to paint)

Method

  • For the biscuit mixture:

  • 1.

    Cream softened butter with sugar until fluffy.

  • 2.

    Add eggs one at a time and beat until combined.

  • 3.

    Sift flour over the mixture and mix with a spatula until it forms a dough.

  • 4.

    Knead in the bowl until the flour has been combined.

  • For the banana biscuits:

  • 1.

    Mash a ripened banana.

  • 2.

    Measure out 100g of the biscuit mixture and place in separate bowl. Mix through banana.

  • 3.

    Add the flour and vanilla and knead in bowl until combined.

  • 4.

    If the mixture is too moist, add more flour.

  • 5.

    Roll this dough out and cut according to template.

  • For the kumquat biscuits:

  • 1.

    Measure out 300g of biscuit mixture.

  • 2.

    Add the Kumquat mixture and knead until it is evenly distributed through dough.

  • 3.

    Roll this dough out and cut according to template.

  • For the lemon biscuits:

  • 1.

    Measure 150g of biscuit mixture and add the lemon zest to this, knead until combined.

  • 2.

    Roll this dough out and cut according to the template.

  • For the chocolate and orange biscuits:

  • 1.

    Mix cocoa with hot water until it forms a paste.

  • 2.

    Add the cocoa paste, orange zest and orange juice to 70g of biscuit dough.

  • 3.

    Knead this until it is combined and a uniform colour.

  • 4.

    Roll this dough and cut according to the template.

  • 5.

    Bake each of these biscuits for 9 minutes or so. Check that the edge biscuits are not getting burnt.

  • 6.

    Once baked, remove from oven and turn them onto a wire rack to cool.

  • To make royal icing:

  • 1.

    Sift icing sugar into a large bowl. Add egg whites and mix until combined. Add lemon juice and mix again.

  • 2.

    Once the icing has reached the right consistency for ‘glue’ remove 2x100g and place into separate bowls.

  • 3.

    In the first bowl – add lemon juice and lemon zest, adjust consistency with water.

  • 4.

    In the second bowl – add orange juice, zest and orange colour – adjust consistency with water.

  • 5.

    Add vanilla to the remaining icing in the original bowl, adjust consistency with water.

  • 6.

    Set aside and cover, by now the biscuits should be baked.

  • To decorate:

  • 1.

    Pipe the royal icing onto the biscuits. (Orange royal icing on the chocolate-orange biscuits; Lemon icing on the lemon biscuits; Vanilla icing on the kumquat biscuits.) To create the outlines, use a piping tip no 3. To fill, just use a cut piping bag.

  • 2.

    Allow the icing to set on the small squares, but before icing has completely set on the lemon and orange – sprinkle over some zest from the corresponding citrus fruit. Add some crumbled kumquat over the middle section of biscuits.

  • 3.

    Once icing has set, mix silver pearl dust with lemon flavor to form a paint. Paint alternating pieces of the kumquat biscuits with this, including the two flasks.

  • 4.

    Use black writing gel to outline the flasks, as well as to write the atomic letters for Ti and Ag in this section.

  • 5.

    Using black writing gel, write the element names on each of the small cubes as well as draw the structure for the citric acid in the lemon component.

  • 6.

    Ice the test tube with royal icing also, and decorate.

  • To assemble:

  • 1.

    Place pieces of the puzzle together on a board and place lab goggles next to it.
