The Great Australian Bake Off

A seven-piece Chinese puzzle that showcases the Five Virtues, as seen on The Great Australian Cook Book.


  • Lemon almond cookies  

  • 180g unsalted butter 

  • 90g pure icing sugar

  • 90g corn syrup

  • 75g egg

  • 450g cake flour

  • 50 almond meal 

  • ¼ teaspoon salt

  • 2 lemon

  • Natural lemon oil 15 drops

  • Vanilla almond cookies

  • 180g unsalted butter 

  • 90g pure icing sugar

  • 90g corn syrup

  • 75g egg

  • 450g cake flour

  • 50g almond meal 

  • ¼ tsp salt

  • 3 tsp vanilla paste

  • 600g white fondant

  • Super gold luster dust

  • Cake decorator’s rose spirit

  • Edible paint: Black

  • Food colour: leaf green

  • Water

  • CMC/Tylose powder


  • For the cookies:

  • 1.

    Preheat oven to 175°C.

  • 2.

    Whisk the whole egg and sift the icing sugar.

  • 3.

    Add the butter, icing sugar, corn syrup, and egg into the stand mixer, beat with pedal head for 1 minute until combined well.

  • 4.

    Sift in the cake flour and add in vanilla extract. Add lemon zest and lemon oil for lemon cookies. Mix at slow speed for 2 minutes.

  • 5.

    Cover the dough with cling film and rest the dough for 1 hour.

  • 6.

    Roll the dough to 5-6mm thick

  • 7.

    Cut 12 square cookies with square cutter on a baking paper.

  • 8.

    Bake the cookies in a cookie tray for 10 minutes.

  • 9.

    Place cookies on a cooling rack and let them cool to room temperature.

  • To assemble:

  • 1.

    Cut the cookies into the tangram shapes with a medium/large serrated knife.

  • 2.

    Cover the cookies with fondant.

  • 3.

    Use a Chinese brush to write the Five Virtues on the cookies and draw decorative bamboo.
