Waffles like you've never seen them – a mochi mix of matcha, cherry and rice cake, topped off with cherry and sake ice cream.
Combine all ingredients in a mixing bowl until smooth.
Place the mixture in microwave and heat for 2 minutes.
Pour starch/cornflour evenly in a shallow dish, place the mocha mixture in the dish and dust with starch/cornflour.
Turn on the waffle machine. Divide mocha mixture into proportions, lightly crease the waffle machine and place mocha mixture in the mould and cook for 5 minutes.
For the matcha sauce:
Add all ingredient in a saucepan, combine evenly until silky smooth, heat until boil
For Cherry ice cream, soak dried cherry blossom in milk. Combine all ingredients in mixer, add in crushed dry ice while mixing until ice cream is set.
Dust matcha power on a plate, stack three colour waffles in the dish.
