Is this marble cake your matcha made in heaven?


  • Vanilla and matcha cake mixture

  • 140g soft salted butter

  • 200g caster sugar

  • 1 tsp vanilla bean paste

  • 3 eggs

  • 200g plain flour

  • 1½ tsp baking powder

  • 200g cream

  • 3 tbsp matcha green tea powder

  • 3 tbsp cocoa

  • Mascarpone frosting

  • 250g cream cheese

  • 500g mascarpone

  • 60g icing sugar

  • 1 tbsp vanilla bean paste

  • 150g thickened cream

  • 500g strawberries


  • Chocolate and matcha mixture:

  • 1.

    Preheat the oven to 180°C.

  • 2.

    Butter and flour four 23cm cake pan.

  • 3.

    In the bowl of the robot/mixing machine, whisk together the butter and sugar to obtain a creamy texture. Add the vanilla. Stir in the whole beaten yellow eggs one by one.

  • 4.

    Add the dry mixture bit by bit, alternating with the cream.

  • 5.

    Add the white eggs to the mix (mix the white eggs until look like a snow).

  • 6.

    Separate the cake mixture in half: in the first container, add the 3 tbs green tea powder. In the second container, add the 3 tbs cocoa.

  • 7.

    In the 4 cake pans, alternately pour a little green mixture, a little white mixture, to create a marble effect to the cut.

  • 8.

    Bake for 20 minutes at 180°C.

  • 9.

    Check the cooking with a small knife – so that it comes out cleanly.

  • 10.

    Remove the still warm cake and put it in the fridge to cool down (for approx. 20 mins).

  • Mascarpone frosting:

    Whisk together the cream with the icing sugar, add the mascarpone and cream cheese and whisk until firm. Mix in the vanilla paste until well combined add in one part some pieces of strawberries.

  • Assemble:

  • 1.

    On one layer put cream add another layer repeat.

  • 2.

    Then put normal cream without piece of strawberry and all around the cake to do an effect naked cake.

  • 3.

    Then on top add slice of strawberries.
