Heat a fan forced oven to 170.c. Grease a regular size loaf tin with some coconut oil.
Blend peeled bananas, sugar, eggs, vanilla extract, and coconut oil together into a smooth mixture.
Sift flour, bicarb soda, cinnamon, nutmeg, into a large bowl then add chopped nuts. Mix blended banana mixture into dry ingredients and mix well either by stirring or hand mixer. Ensure there are no lumps.
Pour the banana bread mixture into the greased tin and place into the oven. Cook it for around 85 minutes or until a skewer or small knife comes out cleanly when you insert it. Take out of oven and allow to cool on a rack.
Slice and serve fresh or toasted by itself or with a spread of quality butter!
