This fresh summer salad looks almost too pretty to eat. Almost!
Place lemon juice and olive oil in a large bowl and stir together. Massage the mixture into the shredded kale leaves adding a pinch or two of sea salt. Keep massaging until leaves are soft and dark green.
Add remaining ingredients to the kale and toss.
To make the dressing whisk all ingredients together and pour over salad before serving.
