This is a really delicious and easy, carb-free meal or light appetiser to share with family and friends.


  • 2x salmon fillets or tails, making sure there are no bones

  • 1 tbs vegetable oil

  • 1 small pot of The Spice Tailor Tomato Chilli Garlic Chutney

  • 1/2 medium red onion, finely chopped

  • 10 gem lettuce wraps, washed and dried

  • Cucumber and Herb Drizzle

  • 4 tbs sour cream (can be light)

  • 2 rounded tbs Greek yoghurt

  • 15g fresh coriander, finely chopped

  • 3x cucumber, peeled, halved, seeds removed and finely chopped

  • Salt and lots of freshly ground black pepper


  • 1.

    Stir together all the ingredients for the sauce and set aside.

  • 2.

    Heat the oil in a small, non-stick frying pan. Pat the salmon dry and season lightly. Place skin side down (if there is some skin) and cook until crisp, flip over and cook this side for another 2-3 minutes or until the salmon is cooked through. Remove the salmon from the pan, remove the oil and add the pot of chutney. Bring to a simmer and take off the heat.

    Build the wraps, flake or cut the salmon into large chunks and divide between the lettuce. Top with a spoon of the hot garlic sauce and drizzle over another spoon of the cucumber and herb drizzle. Sprinkle over the red onions and serve immediately.
