Try this modern twist to glazed ham with ginger, chilli and sweet soy for something new and delicious at your Christmas dinner table.


  • 2 garlic cloves, grated

  • 2 tbs finely grated ginger

  • 2/3 cup kecap manis

  • 1 tsp chilli flakes

  • 1/2 cup brown sugar

  • 2 tbs rice wine vinegar

  • 5kg half leg ham on the bone

  • Fresh chilli and micro coriander to serve


  • 1.

    Preheat the oven to 180°C (or 160 fan forced).

  • 2.

    Line a large baking dish with non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves.

  • 3.

    For the glaze, combine all the ingredients, except the ham in a bowl and whisk to combine.

  • 4.

    Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat.

  • 5.

    Score the fat in across the ham to create 1cm stripes. Transfer to prepared dish.

  • 6.

    Brush one-quarter of the glaze over the ham.

  • 7.

    Bake, brushing with glaze every 15 minutes, for 1 hour 30 minutes.

  • 8.

    Serve slices drizzled with extra glaze and top with fresh sliced chilli and micro coriander.
