Try this delicious Aussie glazed ham recipe, perfect for your Christmas feast.


  • 425g can pineapple pieces

  • 200ml bourbon

  • 3/4 cup brown sugar

  • 1 cup maple syrup

  • 1 cinnamon quills

  • 2 bay leaves

  • 1 tsp fennel seeds

  • 1 tsp five-spice powder

  • 4kg half leg ham on the bone


  • 1.

    Drain the pineapple, reserve the juice and finely chop the pineapple pieces.

  • 2.

    Place the chopped pineapple, reserved juice and all other ingredients, except the ham, in a saucepan over medium heat.

  • 3.

    Stir to dissolve sugar, then bring to a simmer. Reduce heat to medium and simmer for 30 minutes or until thickened and reduced.

  • 4.

    Strain the glaze through a fine sieve into a heatproof jug, pressing through with a spatula, discarding solids.

  • 5.

    Preheat the oven to 180°C (or 160 fan forced).

  • 6.

    Line a large baking dish with non-stick baking paper.

  • 7.

    Place an oven shelf in the lowest position. Remove all other shelves.

  • 8.

    Using a small sharp knife, cut around the ham shank, then carefully run the knife under the skin, around the edge of the ham. Gently lift off the skin in 1 piece by running your fingers between the rind and the fat. Discard skin.

  • 9.

    Brush with some of the glaze then roast for 1 hour 30 minutes, glazing every 15 minutes until ham is sticky and darkened. 

  • 10.

    Remove the ham from the baking dish and place on a serving platter and slice. Spoon any remaining glaze and pan juices over the slices of ham.
