Dice red onion as small as you can.
Cut tomato in half and spoon out the flesh leaving you with the skin of the tomato. Dice it small, too.
Remove the skin from the avocados, or spoon the contents of the avocado into a bowl. Add in onion, tomato, lemon juice, salt. Mas together and mix well.
Cut the capsicum in half and spoon out the seeds. Fill with guacamole, serve with sliced carrot and celery sticks
