A fabulous healthy snack recommended by fintess guru Kim Beach.


  • 3 x zucchini

  • ½ cup cottage cheese

  • 4 slices smoked salmon

  • 6 tooth picks


  • 1.

    Using a slicer or knife, cut the zucchini long ways. You should get two, really nice pieces per zucchini.

  • 2.

    Lay zucchini out flat and top with smoked salmon and cottage cheese.

  • 3.

    Roll zucchini up and place a tooth pick in the middle to hold it together.
