Make yourself some of Julio Castellano's yummy fried rice today.

Ingredients

  • 350g or 2 cups of white rice (longrain, basmati or Jasmine)

  • 4 eggs (lightly whisked)

  • 4 bacon rashers (fat trimmed off, rough diced)

  • 2 medium carrots (peeled, cut into small cubes)

  • 4 shallots (trimmed, finely sliced)

  • 2 medium cloves of garlic (minced or finely sliced)

  • 1 cup frozen peas

  • 2 teaspoons of vegetable or canola oil

  • 2 teaspoons sesame oil

  • 3 tablespoon soy sauce

  • Ground or cracked white pepper to season

  • Coriander to garnish

Method

  • 1.

    Fill a large saucepan with water put on a high heat and bring it up to the boil. Cook your chosen rice according to the packet directions or around 15 minutes until soft. Drain and rinse it in a large colander. Save to one side.

  • 2.

    Get the eggs ready by cracking them into a small bowl and lightly whisking them until combined. Place a large non stick wok or fry pan over a high heat and add half the sesame and vegetable oils. Add the eggs and whisk them up to scramble them into small pieces.Turn off heat save to one side.

  • 3.

    Put the clean wok or frypan back onto a high heat. Add the chopped bacon, carrots, shallots & garlic and cook for around 3-5 minutes stirring until golden. Add the peas cook for a further 2 minutes. Add the rice, eggs and soy sauce and stir it all together until heated through.

  • 4.

    Serve straight from the wok into bowls and garnish with coriander and chilli is desired. Enjoy!
