Ingredients

  • 2 cups self-raising flour

  • 1/4 teaspoon bicarbonate of soda

  • 1/4 teaspoon fine salt

  • 1 3/4 cups milk

  • 2 Large eggs

  • 2 teaspoons vanilla extract

  • 1/3 cup caster or granulated sugar

  • Butter for cooking (plus some extra to serve)

  • Strawberries and blueberries to serve. (approx 4 each per person)

  • Honey or maple syrup to serve

Method

  • 1.

    Take a large mixing bowl and whisk the milk, eggs and vanilla essence together. Next sift the flour, salt and bicarbonate of soda into the bowl. Add the sugar and then whisk all the ingredients together until well combined. Be careful to get rid of any lumps if they appear.

    Heat a large non-stick frying pan over medium heat. Add a small piece of butter and coat pan evenly. Use around a 1/4 cup of mixture per pancake and cook each pancake for 2 to 4 minutes or until bubbles appear on the surface and it is golden brown underneath. Lift corner up with a spatula to check. Flip over with the spatula and cook for another 3 minutes or until it is golden brown. Transfer to a plate or oven tray and cover with cling film or foil to keep warm. Repeat with remaining mixture, greasing the pan with butter between batches.

    Give about 3 pancakes per serve and garnish with fresh berries and some extra butter. Drizzle with honey or maple syrup and serve warm. Enjoy.
