For an easy, vegetarian dinner, try this tasty spiced cauliflower cheese recipe.

Ingredients

  • 1 large head cauliflower, separated into florets

  • Extra Virgin Olive Oil

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp ground cumin

  • 1 tsp fennel seeds, crushed

  • 2 tsp paprika

  • 1 fresh red chilli, deseeded and chopped

  • 1 dessert spoon honey

  • 2 x dessert spoons lemon juice

  • Zest of lemon

  • 100g Emmemental cheese, grated

  • 50g Gruyere cheese, grated

Method

  • 1.

    Preheat over to 180C.

  • 2.

    Place the cauliflower florets in salted boiling water and cook for 5 minutes. Drain and place the florets into a large mixing bowl. Add the olive oil, salt, pepper, cumin, paprika and fennel seeds. Coat the florets thoroughly. Add the red chilli, the honey and the lemon juice. Coat again gently to ensure the florets remain in tact.

    Place the spiced vauliflower florets into a large over proof dish. Pop them in the oven at 190C for 15 minutes or so until cooked. Once the florets have a golden colour, remove them from the oven and sprinkle over the lemon zest and cheese.Return to the oven and roast until the cheese is melted and has a little colour.

    We recommend serving with pork chops or just on its own.
