Fresh roasted almonds seasoned with the savoury flavour of Tamari sauce makes them the ultimate snack to munch on.


  • 1 cup (155g) almonds

  • 1/4 cup (60ml) tamari (gluten-free soy sauce)

  • 2 tbsp pure maple syrup

  • Pinch of rock salt

  • Olive oil spray


  • 1.

    Preheat the oven to 160°C. Line a baking tray with baking paper, spread almonds evenly on it and pop it into the oven for 7–8 minutes to give them a light roasting.

  • 2.

    Combine the tamari, maple syrup and salt in a bowl.

  • 3.

    Remove the almonds from oven and add to the tamari mixture. Stir to ensure that all almonds are coated.

  • 4.

    Using a colander, strain the almonds to remove excess tamari mixture.

  • 5.

    Spray the baking paper with olive oil spray and spread the coated almonds evenly. Roast for a further 10 minutes (keep an eye on them to ensure they don’t burn).

  • 6.

    Remove almonds and transfer to a clean sheet of baking paper so they don’t touch and allow to cool.
