The Great Australian Bake Off's Sian has created an incredible recipe to support Australia's Biggest Morning Tea and the Cancer Council. 


  • 500g grated carrots

  • 350g almond meal

  • 3 eggs

  • 2 teaspoons vanilla paste

  • 2 teaspoons cinnamon

  • 1 teaspoon nutmeg

  • 70ml light olive oil or melted butter

  • 160g honey

  • 1/2 cup walnuts (chopped)

  • 1 cup sultanas

  • 2 teaspoon baking powder

  • Extra walnuts to serve


  • 1.

    Preheat oven to 180°C and line a spring form cake tin with baking paper.

  • 2.

    Combine almond meal, walnuts, carrots, vanilla paste and sultanas in a large bowl.

  • 3.

    In a separate bowl combine cinnamon, nutmeg and baking powder and add to other dry ingredients.

  • 4.

    Whisk eggs together and add to bowl followed by honey and olive oil and mix well.

  • 5.

    Pour mixture into cake tin and bake in oven for 40 minutes.

  • 6.

    Top with icing sugar and walnuts.* (See Notes)

Sian has topped her cake with icing sugar and walnuts, but you could also top with Greek yoghurt or use an icing made with coconut milk.
