Preheat oven to 180°C and line a spring form cake tin with baking paper.
Combine almond meal, walnuts, carrots, vanilla paste and sultanas in a large bowl.
In a separate bowl combine cinnamon, nutmeg and baking powder and add to other dry ingredients.
Whisk eggs together and add to bowl followed by honey and olive oil and mix well.
Pour mixture into cake tin and bake in oven for 40 minutes.
Top with icing sugar and walnuts.* (See Notes)
