This dessert combines two classics - delicious madeleines and fluffy chocolate mousse - for the ultimate sweet treat.


  • Chocolate mousse:

  • 3 large eggs

  • 250g caster sugar

  • 225g butter

  • 200g dark chocolate

  • 120ml warm water

  • Madeleines

  • 2 eggs

  • 250g plain flour

  • 250g caster sugar

  • 2 tbs runny honey

  • 225g melted butter


  • 1.

    Preheat oven to 180C/350F/Gas Mark 4

  • 2.

    Place the broken-up chocolate chocolate into a large heatproof bowl, sitting over a pan of barely simmering water, making sure the bowl doesn’t touch the water.

  • 3.

    As the chocolate starts to melt add the warm water and mix.

  • 4.

    Keep the heat at its lowest setting and allow the chocolate to melt slowly. Once completely melted set to one side.

  • 5.

    Separate the eggs.

  • 6.

    Whisk the egg yolks and sugar together to make a sabayon.

  • 7.

    In a separate bowl whisk the egg white until firm.

  • 8.

    Gradually fold the sabayon into the chocolate mixture, before it is fully mixed in add egg whites.

  • 9.

    Once fully mixed spoon into pots, and place in the fridge.

  • 10.

    For the Madeleines, melt the butter and honey together.

  • 11.

    Blend the remaining ingredients (eggs, sugar and butter) together in a mixing bowl.

  • 12.

    Add the butter and honey to the mixture.Beat for 1-2 minutes to form a batter. Place into a piping bag and pipe into a madeline tray.

  • 13.

    Bake at 180 degrees C for 8 minutes.

  • 14.

    Serve the mousse and madeleines together.
