A delicious pastry for all occasions.
Preheat the oven to 200°C/400°F/gas mark 6. Lightly grease a large baking tray.
On a lightly floured surface, roll out the pastry to a 5mm thickness, then cut out 4 x 15cm circles – use a small plate as a template. Place the pastry circles on the prepared baking tray, then prick all over with a fork and dust with the icing sugar.
Warm the apricot jam in a small saucepan over low heat until thin enough to brush.
Arrange the apples over the pastry in circles and brush with the apricot jam. Bake for 10–12 minutes until golden brown and crisp around the edges. Serve with vanilla ice cream.
