A delicious homemade quiche with buttery pastry from Not Quite Nigella blogger, Lorraine Elliot.


  • For crust

  • 250g cream cheese, cold

  • 75g butter, cold, cut into cubes

  • 1 1/4 cups bread flour

  • For filling

  • 3/4 cup cream

  • 3 eggs

  • 1/2 cup chopped spring onions

  • 1 cup grated cheese

  • For topping

  • 125g smoked salmon

  • 1 tablespoon chives, cut into inch long pieces


  • 1.

    Place the cream cheese, butter and flour in a food processor and pulse until it starts to come together. Press into a rectangular tin on the base and sides. Place in the freezer for 10 minutes.

    Preheat oven to 200C/400F. Bake the base in the oven for 15 minutes (you don't need to fill this with beans or rice or dock the pastry).

  • 3.

    While it is baking, make the filling. Whisk the cream and eggs together and stir in the spring onions and cheese. When the base has finished baking, pour in the filling and bake for 20 minutes. Cool and then top with fans of smoked salmon and chives.
