These raw 'Tim Tams' are a delicious treat for all the vegans out there!
To make the buckwheat crust:
1.
Food process all the dry ingredients into meal consistency. Add dates and coconut oil and process again
To make the filling:
1.
Blend all the ingredients in a blender except coconut oil till smooth.
2.
Add the oil again and blend
To assemble:
1.
Grease the mould with melted coconut oil.
2.
Place half of the crust mixture into the mould and press firmly to distribute evenly.
3.
Pour in all of the filling mixture and let it firm up in the fridge/freezer.
4.
After the mixture is firm, place the rest of the crust mixture on top, and store in the fridge while making the chocolate coating.
To make the coating:
1.
Melt the oil in a saucepan and stir through the cacao butter, cacao powder and liquid sweetener.
2.
Cut your filling into small rectangular or square shapes and coat individually with the chocolate coating.
