  • 1 bunch rainbow dutch carrots, sliced into discs 

  • 2 cm cube ginger, diced fine 

  • 1 clove garlic, minced

  • 1 pinch fennel feed

  • 1 lime, zest

  • ½ tsp honey

  • 5 thyme sprigs

  • 1 fennel bulb, diced

  • 1 nectarine, diced 

  • ½ cup almonds, chopped


  • 1.

    Make the salad dressing by mixing garlic, ginger, thyme, lime rind and juice, fennel seeds and honey in a bowl.

  • 2.

    Then add sliced carrots, fennel, nectarine and almonds and toss with dressing, serve and enjoy.
