Try this My Food Bag Halloumi Tortillas recipe... the kids will love it!


  • Coriander & Avocado salsa 

  • 1  - 2 avocadoes, diced 1-2 cm

  • 1 tablespoon finely diced red onion (optional, adults)

  • 3 roma tomatoes, diced 1cm

  • 2 teaspoons lime juice

  • 1 tablespoon roughly chopped coriander leaves (optional, adults)

  • 1 teaspoon sweet chilli sauce

  • ¼ teaspoon salt

  • Pinch of pepper

  • Halloumi Tortillas

  • 8-10 soft tortillas

  • 2 packets halloumi cheese

  • 1 iceberg lettuce

  • 1 tablespoon olive oil

  • 1-2 teaspoons white wine vinegar

  • 1-2 tablespoons coriander leaves, to serve


  • 1.

    PREHEAT oven to 180°C/160°C (Fan) (if using oven to warm tortillas). Read through recipe.

  • 2.

    In a medium serving bowl, mash avocado using a fork until smooth, stir through all remaining coriander and avocado salsa ingredients, set aside.

  • 3.

    Wrap tortillas in foil and warm in oven for 5-6 minutes (alternatively, wrap in a clean tea towel and microwave on high for 30 seconds just prior to serving).

  • 4.

    Cut halloumi into 1cm thick slices. Heat a drizzle of olive oil in a large fry-pan (preferably non-stick) on medium-high heat and cook haloumi for 1-2 minutes each side, until golden. Drain on paper towels.

  • 5.

    While halloumi is cooking, shred lettuce, transfer to large serving bowl and toss with oil and vinegar.

  • 6.

    To Serve, divide tortillas between plates, top with lettuce, halloumi and salsa. Garnish with coriander and roll up to eat.
