Try this My Food Bag Halloumi Tortillas recipe... the kids will love it!
PREHEAT oven to 180°C/160°C (Fan) (if using oven to warm tortillas). Read through recipe.
In a medium serving bowl, mash avocado using a fork until smooth, stir through all remaining coriander and avocado salsa ingredients, set aside.
Wrap tortillas in foil and warm in oven for 5-6 minutes (alternatively, wrap in a clean tea towel and microwave on high for 30 seconds just prior to serving).
Cut halloumi into 1cm thick slices. Heat a drizzle of olive oil in a large fry-pan (preferably non-stick) on medium-high heat and cook haloumi for 1-2 minutes each side, until golden. Drain on paper towels.
While halloumi is cooking, shred lettuce, transfer to large serving bowl and toss with oil and vinegar.
To Serve, divide tortillas between plates, top with lettuce, halloumi and salsa. Garnish with coriander and roll up to eat.
