The Great Australian Bake Off

This delicious slice is perfect for any afternoon tea.


  • Base

  • 335g plain flour

  • 100g brown sugar

  • 60g self raising flour

  • 2 tbs Dutch cocoa

  • 200g unsalted butter, melted

  • Filling

  • 500ml milk

  • 10g vanilla paste

  • 2 egg yolks

  • 35g plain flour

  • 60g caster sugar

  • 165ml water

  • 85g cornflour

  • Orange Syrup

  • 1 cup caster sugar

  • ½ cup water

  • ¾ cup squeezed orange juice

  • Zest of 1 orange

  • 1 tbs cornflour

  • 2 tbs unsalted butter

  • Segments of orange

  • Topping

  • 165g dark chocolate,

  • 80g melted unsalted butter

  • Royal icing

  • 1 egg white

  • 150g pure icing sugar

  • 1tbs squeezed orange juice


  • 1.

    For the base, whisk together flour sugar and cocoa in bowl and add melted butter. Stir to combine. Press into a greased and lined pan. Bake at 180°C for 15-20 minutes or until firm. Cool to the side

    For the filling, pour 2/3 of milk into a saucepan and add water, heat to just before boiling point. In a separate bowl pour rest of milk, add yolks, vanilla, flour, sugar and cornflour. Whisk to combine. When milk reaches temp, add ½ cup to egg mixture to temper, whisk with ingredients then pour mixture into saucepan and keep whisking until mixture thickens. Set aside to cool.

    For the orange syrup, whisk together sugar and water in a saucepan and bring to boil. In a bowl whisk together orange zest, juice and cornflour then add to saucepan and whisk. Simmer until mixture thickens, roughly 10 minutes while stirring throughout. When thick stir in butter. Allow to cool a bit then mix with filling. Pour over base and leave to cool.

    For the topping, melt chocolate and butter together and pour over slice

    For the royal icing, whisk egg white until foamy then add icing sugar, when thickens add orange juice to taste
