This is a super fun recipe for Christmas. Make them and get the kids to help decorate!


  • For the Dough

  • 125 g plain flour (1 cup)

  • 2 sachets Dr. Oetker Baking Powder (2 tsp)

  • 110 g caster sugar (0.5 cup)

  • 100 g butter, softened

  • 2 eggs

  • 1 tsp Queen Vanilla Bean Paste

  • 2 tbsp milk (40 ml)

  • 2 tbsp desiccated coconut

  • 60 g chocolate bits

  • To Decorate

  • Icing sugar

  • Approx. 1 1/2 tbsp hot water

  • Approx. 15 g chocolate bits

  • 3 tbsp desiccated coconut

  • Dr. Oetker Ready to Roll Fondant Icing White

  • Dr. Oetker Gel Food Colour Bright Red

  • Dr. Oetker Gel Food Colour Sunshine Yellow


  • 1.

    Preheat the oven to 180°C (conventional) and line a cupcake tray with 12 paper cases.

  • 2.

    Place the flour, baking powder, sugar and butter into a large bowl or stand mixer fitted with the paddle attachment. Beat until the mixture looks like fine bread crumbs.

  • 3.

    Continue mixing and add in the eggs, beating until the mixture comes together in a thick batter. Add in the vanilla, coconut and milk and beat for a final time, just until incorporated. Stir the chocolate bits into the batter.

  • 4.

    Distribute the batter evenly between the paper cases. Bake for 20 minutes or until golden and springing back lightly when touched. Set aside to cool completely.

  • 5.

    Mix icing sugar and water to get a thick glaze then pour the glaze onto the cakes and use a knife or a small brush to spread it.

  • 6.

    Create the eyes and the mouth of the snowmen by using chocolate bits and sprinkle with coconut.

  • 7.

    Colour some white icing with red and yellow gel food colour to make orange icing. Create the noses and use a knife to cut a hole in the middle of each cupcake before placing the nose inside the cake.
